Modica (or Modicano) chocolate is obtained from a particular cold processing of the chocolate, excluding the classic conching phase, a process that consists in mixing the mixture of ingredients for very long times in special mixers called conche, possibly adding some more cocoa butter.
In 2018 it obtained the IGP recognition from the European Union and remains one of the most sought after and famous products of Sicily.
