Traditional 60%. The starting point: cocoa and sugar, worked at low temperature as Modica tradition demands.

Modica Chocolate IGP is different from standard chocolate: its low-temperature processing and grainy texture make the cocoa and sugar crystals more direct in the mouth.

How to choose

Start here if you want to understand the real identity of Modica chocolate before moving to fruit or special flavours.

How to taste it

Break a small piece and let it melt slowly. Do not expect a creamy industrial texture: the graininess is part of the identity. It works well with coffee, dessert wines, liqueurs and dry pastries.

How to compare flavours

Storage

Keep chocolate in a cool, dry place, away from heat and strong smells. Avoid the refrigerator unless absolutely necessary, because humidity can damage texture and aroma.
