Guide to Sicilian sauces: how to choose and use them well

A good ready-made sauce is not a compromise. It is an ingredient that saves time while keeping flavour, if it is made with good tomato, olive oil and real vegetables or fish.

Can a jarred sauce be really good?

Yes, if the ingredient list is honest and the tomato is good. A Sicilian artisan sauce should taste of tomato, olive oil, herbs and the main ingredient, not sugar or anonymous seasoning. Heat it briefly and avoid overcooking: the sauce is already cooked.

What is pasta alla Norma?

Pasta alla Norma is one of Sicily’s most famous dishes: tomato sauce, aubergines, basil and salted ricotta. A good ready-made Norma sauce gives you the base; add pasta cooked al dente, grated ricotta salata if available, and a drizzle of olive oil.

Which pasta works best with Sicilian sauces?

Short shapes such as rigatoni, penne and casarecce are excellent with thick sauces and aubergines. Long pasta works better with fish sauces, anchovies, colatura and lighter tomato sauces. Always finish the pasta in the pan with a little cooking water.

How should I use seafood sauces?

Heat them gently and serve with pasta that holds sauce well. Pair them with Sicilian white wines such as Grillo, Catarratto or Inzolia. Avoid heavy cheese unless the recipe clearly calls for it.

Is tomato passata only a base?

No. A good Sicilian passata can be used almost as a finished ingredient: for quick sauces, pizza, legumes, soups and even bruschetta with olive oil and salt. The better the tomato, the less you need to add.

How long does a sauce last after opening?

Keep it in the refrigerator and use it within a few days. If you have heated only part of the jar, avoid contaminating the rest with pasta or used spoons. Clean handling makes a big difference.
