Tax includedOur tuna Bottarga is handcrafted in Syracuse with the utmost care in the selection of the raw material and in the quality of the manufacturing process.
The tuna from which the bottarga is extracted were all caught in compliance with the Dolphin Safe Protocol which regulates tuna fishing trips in such a way as to safeguard the health of the dolphins, preventing them from being caught accidentally.
Once the tuna eggs have been extracted from the tuna, they are washed, salted with sea salt and left to dry and dry with a process that requires continuous attention and care to obtain the ideal degree of drying. Once ready, the tuna bottarga is stored in vacuum-packed slices.
Tuna Bottarga is an excellent ingredient for taste and quality, but at the same time very simple to use and useful for preparing quick dishes.
Especially the first courses, such as the Linguine alla Bottarga di Tuna, very simple to prepare and very tasty. Lightly heat a little extra virgin olive oil with very little minced garlic, black pepper, parsley and a few pieces of hot pepper, remove from the heat and add a few thin slices of bottarga and leave to flavor for a few minutes. Once the pasta has been drained, mix it with this preparation and add a lot of sliced bottarga. The dish is ready!
Bottarga has a very strong flavor and is quite salty, so do not add too much salt to the pasta and consider that the bottarga on its own will give a wonderful salinity to the pasta. Then if you want some advice, accompany us with a Grillo, a Sicilian white with a unique scent, like our LaLuci del Baglio del Cristo.
Tuna Bottarga can also be used to flavor fish soups.
Also excellent as a tasty appetizer cut into slices and seasoned with extra virgin olive oil, parsley and a little lemon juice (the lemon must be Sicilian! I don't compromise on this!).
Once the package has been opened, it can be stored in the refrigerator for several months, obviously to enjoy it at its best we recommend not to go beyond two months from opening.
