Tax includedLattume di tuna (Gonadi) is taken from male tuna, is cleaned, cooked in water and salt, cooled, drained and stored in glass jars with olive oil.
Lattume is a typical Sicilian (but also Sardinian) fish product and is obtained from the processing of the seminal liquid bag of male tuna. Particularly typical of the areas of Trapani, Palermo and Syracuse, it is the male equivalent of bottarga.
The lattume has a color more on the white - beige, while the tuna bottarga is more on the orange.
Splendid and refined appetizer, with the addition of a few parsley leaves and a few drops of lemon. Also appreciated as a second course.
Lattume is a particular dish, but if you want to try it you will discover a part of the tuna that preserves an intense flavor of the sea and a very delicate unique taste.
Once opened, keep refrigerated and use within 3 days.
