Within the framework of a small family-run estate, Salvatore Ferrandes manages organically his terraced land on the island of Pantelleria, where the family, of Spanish heritage, has been present for more than six hundred years. The favorable climate, the generous fertility of volcanic soil and the careful craftsmanship in processing allow to obtain particularly high quality products such as capers, raisins and the Passito of Pantelleria.
The Passito Ferrandes has been called one of the best sweet wines of the Mediterranean. Produced from ancient grape vines of Zibibbo of over forty years typically Pantelleria-style with a very low sapling on volcanic soils, it shows its territoriality and exceptionality from the first sip.
In a particularly fruitful and tradition-rich terroir, the two hectares of vineyards, planted with saplings to protect themselves from the impetuous wind of the island, are found on sandy soils of volcanic origin, the Zibibbo grapes are harvested manually in small crates and left to wither in the sun for about 10-15 days. Fermentation is spontaneous in small steel barrels, where aging takes place for at least 12 months.
The result is an elegant and intense Passito, with an energetic amber color, to the nose it exudes intense and ample scents of dried fruit, and also candied fruit and dried fruit. In the mouth it is elegant, aromatic, intense, soft and full-bodied, to the taste it also finds a good balance between roundness and verticality, with a complex and extraordinary persistence. Produced in less than 4000 bottles and only in the best years.
Service temperature
It is recommended to taste it at a temperature of 12-14 ° C. To drink immediately, expresses its best in a few years.
Pairings
The Passito di Pantelleria is to be drunk at the end of a meal, it goes wonderfully well with dry pastries, tarts and pastries in general. Try it also in combination with aged cheeses.
