

A wine with an unmistakable footprint born outside the limit of the appellations IGP or DOP. The result of a masterly fusion of two different expressions of a single selection of a special clone cultivated in two distinct areas of the estate.
GRAPE VARIETIES, AGE AND PRODUCTION AREA: A special selection registered as V10 propagated from an ancient biotype of Catarratto variety. The vineyards cultivated in the Vella area date from prior to 1995.
POSITION AND SOIL: Plateau with a major clay content and high chalk element
VINE MANGEMENT: Pruning on spurred cordon (Guyot) with phased removal of shots and weight control by thinning out the bunches in veraison. Harvested when there was advanced organoleptic ripeness to maintain complexity and structure.
WINE MAKING : The grapes were harvested in small perforated crates of about 14 kg, placed in refrigerated units at 3*C for 24-48 hours, after which the whole bunches were pressed in a pneumatic press. The resulting musts were separated into 2-3 fractions producing the very best must, a second and third pressing. After a quick cold clarification, these were decanted and fermented at a controlled temperature with choice yeasts in stainless steel vats.
REFINING: Six months after the harvesting, there were test blendings of the different masses, then they were re-assembled in stainless steel vats. After undergoing stabilization and filtration, they were bottled. Maturation in stainless steel can be of differing duration – between six months and two years- depending on the wine’s needs. The finished wine remained in the winery at a controlled temperature until distribution, no earlier than the end of the June following harvest.
COLOUR: Bright straw yellow with golden glints.
AROMAS: Ripe fruit, rich and concentrated, combining well. It enriches with the aging of vanilla and roasting coffee notes.
TASTE: Velvety and seductive to the taste. With a good and persistent structure. The whole is held up by a balanced and quite harmonious acidity, making for really fine typically Mediterranean characteristics.
ALCOHOL CONTENT: 13.50% by volume
FOOD PAIRINGS: It forms a good marriage with dishes of oily fish, grouper, black cod, un-salted cod and with shellfish such as lobster and lobster-crab. Its fascinating structure also allows it to be enjoyed with meat dishes.
SERVING TEMPERATURE: 7-10°C
KEEPING: Long aging in the bottle will further improve this wine.
