Zibibbo Guardiani di Ceppibianchi Sicily IGT White Wine 2022

Wine with typical aromas of jasmine and flowers of blossom,  Ceppibianchi is composed exclusively of Zibibbo grapes. Great to accompany your aperitifs, ideal with all dishes based on fish and white meats.

Classification: IGT  Sicilia.

Altitude: 140 m asl.

Climate: Temperate-warm, Mediterranean.

Terrain: Clay with considerable content of natural organic substance.

Grapes yield/ha: 60 q.li.

Training System: Counter-espalier, guyot pruning.

Age of Vineyards: 25 years.

Plant Density: 4,400 plants/ha.

Harvest: Third and fourth week of August (4 pickings).

Grape Variety: 100% Zibibbo.

Vinification: The harvest is done manually in small boxes. After de-stemming, the bunches are selected on a sorting table. This is followed by a prolonged cold maceration on the skins at 6-8 ° C and then started at a soft and progressive pressing of the grapes. We continue with a slow thermo-controlled alcoholic fermentation.

Ageing/Refining: The wine refines on the noble skins for four months in steel and at least three months in the bottle before being marketed.

Organoleptic Characteristics:  

• Color: crystalline with a straw-yellow color.
• Scent:the typical aromas of jasmine and flowers of zagara follow delicate notes of candied fruit and sultanas;
• Taste: excellent as an aperitif, ideal with all dishes based on fish and white meats;

Total Acidity: 4,5 g/l.

Serving Temperature: 10-12°C.

Food Pairing: Excellent as an aperitif, it also pairs well with fish crudité, grilled and salt baked fish and vegetables.
