Vintage: 2021
Pecorino "Aries" by Ciavolich is a very fragrant, aromatic and dynamically fresh white.
It is made with grapes from the two estates of the cellar: that of Loreto Aprutino and that of Pianella.
The Loreto Aprutino estate is the oldest one, dating back to the end of the 1800s, here you can find about one hectare of Pecorino vines planted in 2011
The Pianella estate, on the other hand, is a little more recent and here too there is about one hectare of vineyard.
From the union of these two plots, this wonderful white wine is born, which contains the history and tradition of one of the oldest cellars in all of Abruzzo.
During the process of creating this wine, the grapes are first picked by hand and, immediately after a soft pressing of the same, the wine is fermented in stainless steel containers at a controlled temperature, after which it is left to mature for about 3 months in French tonneaux, and finally, towards the end of February it is bottled and before being released on the market, it is left to further refine for about a couple of months in the cellar.
In the glass this wine has a straw yellow color which is crossed by greenish flashes.
Its aromas are of aromatic herbs such as: thyme, sage, rosemary, all united on a background of yellow pulp fruit.
While the sip results in an alternation between flavor and freshness, which come together in a unique balance, capable of leaving the mouth dry and eager for the next sip.
Recommended pairings are fresh cheeses, risottos with vegetables, white meats or grilled fish.
