Amarone della Valpolicella 2012 - Classic DOCG
Amarone della Valpolicella Classico is a still red wine with an impenetrable ruby color and is classified DOCG. The vines are located in the geographical area of Valpolicella, in Veneto. The company is located on the hills of Negrar where the vineyards alternate with olive groves and cherry trees and produces Amarone only in exceptional vintages, so much so that it is unanimously considered a collector's wine. Rich in flavors, sensual and opulent, it is a reference point for the other types of Amarone.
To assemble this precious Amarone della Valpolicella Classico, the Quintarelli cellars mainly use Corvina grapes combined with Rondinella with variable percentages of Cabernet Sauvignon, Croatina, Nebbiolo and Sangiovese. The grapes are carefully selected during the harvest which takes place from mid-September to early October. Once harvested, the grapes are put to rest and well arranged on racks and in wooden boxes so as to let them dry naturally. The noble rot appears between the end of November and the beginning of December. Fermentation by indigenous yeasts is characterized by slowness as it takes about 45 days, soft pressing takes place in February and two months of maceration follow. After the racking phase, the wine matures for 7 years in medium-large Slavonian oak barrels where further alcoholic fermentations take place that will give birth to Amarone Quintarelli, known for its extraordinary complexity.
