A very elegant sparkling wine obtained using the Martinotti-Charmat method, from Grecanico and Chardonnay grapes grown on the slopes of Etna, in the municipality of Castiglione di Sicilia in the province of Catania.
Duca Brut by Duca di Salaparuta is a fresh and lively sparkling wine on the palate, very well balanced, with a notable personality.
It is excellent for any occasion, from fresh aperitifs to delicious shellfish and seafood dishes.

Tax includedOn the slopes of Etna, in a complex territory, to which the soil of volcanic origin gives unique characteristics, Duca di Salaparuta has chosen the Tenuta di Vajasindi, in the Passopisciaro hamlet, in the municipality of Castiglione di Sicilia. The estate consists of 21 hectares of land divided into two terraces, the first at approximately 700 meters above sea level and the second and third at 620 meters above sea level.
Here Duca di Salaparuta decided to experiment with the difficulties of mountain agriculture, favoring the greater healthiness of the land over simplicity, with the aim of reducing interventions in the vineyard to a minimum. The location of the Estate, in the northern area of the Volcano, determines a unique microclimate which makes it a particularly suitable area for the cultivation of red grape varieties.
The choice of these territories was made by the Duca di Salaparuta technicians taking into account the ongoing climate changes and relevant factors such as excellent ventilation, adequate water drainage capacity and a good temperature range.
And it is precisely in these territories that Duca Brut was born, a balanced bubble, with fruity and evolved aromas, which is very fresh and lively on the palate.
It has a straw yellow color, and the aroma has a pleasant and complex bouquet, where fruity aromas and sensations of bread crust stand out.

HARVEST Manual and morning towards the end of August, slightly early in order to preserve acidity
VINIFICATION Obtained from softly pressed whole grapes, using only the first fraction of free-run must, 55% which is then fermented at low temperature. The wine obtained is further processed in an autoclave with the long "Charmat" sparkling process
MATURATION After secondary fermentation, it remains in an autoclave on its own yeasts for at least 6 months
AGING At least three months in the bottle at a controlled temperature
