The nose has delicate hints of bread crust, accompanied by mineral notes and some nuances of currant.

On the palate it is very fresh, lively with a great balance between flavor and acidity

It is a Spumante Brut of Quality perfect to accompany raw fish, such as a cruditè, or a tartare

Harvest: Manual harvest: first half of August

Production technique: Vinification of whole grapes in white, with soft pressing. Low temperature fermentation. Draft during the spring following the harvest. Refermentation in the bottle at a controlled temperature of 17°.

Maturation: In contact with the lees for 60 months, placed on pupitres with manual remuage. Disgorgement carried out in November 2021. Then aging in the bottle.
