Valdemone Extra Dry Rosé Sparkling Wine - F. Tornatore Winery

The cultivation of vines and the production of wine by the Tornatore family is a tradition that dates back to 1865 when the great-grandfather of the current owner began farming. Then in 1910, Giuseppe, grandfather of the current owner, built the house and millstone and increased the hectares of vineyards. A family with deep roots in the territory of origin, which in subsequent generations, has never neglected the attachment and respect for it and for traditions, and thanks to the combination of soil, climate and the wisdom of the winemakers, produces wines of the highest quality but above all special and unique.

The vineyards, cultivated on the northern side of Etna, are located at an altitude of 650 m above sea level, in the municipality of Castiglione di Sicilia with a north-facing exposure.

Produced on the north side of Etna, in Castiglione di Sicilia, Valdemone Spumante EXTRA DRY is obtained from Nerello Mascalese grapes and vinified in white with the Charmat method.

YIELD PER HECTARE: 70 quintals.

HARVEST PERIOD: 1st and 2nd decade of September

VINIFICATION SYSTEM: The bunches of grapes, harvested manually in boxes, arrived in the cellar are pressed whole in a vertical hydraulic press. The must obtained from the first fermentation at a controlled temperature naturally decants cold to maintain the natural aromas of the grapes and obtain a base wine rich in acidity and aromas. The second fermentation (second fermentation) follows through the inoculation of selected yeasts in steel tanks at controlled temperature and pressure (autoclaves) - Charmat method - where the sparkling wine ages for four months in contact with the yeasts.

AGING: Three months of aging in the bottle before being marketed.

ORGANOLEPTIC CHARACTERISTICS: Soft pink, lively and brilliant. Delicate, fine and persistent perlage. Fragrant and harmonious on the nose, with pleasant delicate notes of bread crust, pink grapefruit, talc and hawthorn. Dry, rounded and savory taste. The bubbles offer a fresh and dynamic taste. The crunchy fruit ends pleasantly. Surprising drinkability.
