Valdemone Brut Sicilian Sparkling Wine- Tornatoree
The cultivation of vines and the production of wine by the Tornatore family is a tradition that dates back to 1865 when the great-grandfather of the current owner undertakes agricultural activity. In 1910, Giuseppe, the current owner's grandfather, built a house and mill and increased the hectares of vineyards. A family with deep roots in the territory of origin, which in subsequent generations, has never neglected the attachment and respect of the same and traditions, and thanks to the combination of soil, climate and wisdom of the winemakers, produces wines of the highest quality but above all special and unique.
The vineyards, cultivated on the northern side of Etna, are located at an altitude of 650 m above sea level, in the municipality of Castiglione di Sicilia with exposure facing north.
BRUT sparkling wine made from Nerello Mascalese grapes vinified in white with the charmat method.
In autoclave the sparkling wine is aged for about 6 months in contact with the yeasts.

WINEMAKING SYSTEM Harvested manually, the grapes are pressed with a vertical hydraulic press. The must obtained from the first pressing, decant naturally cold. Once this has happened, start the first fermentation at controlled temperature. Follow the second fermentation in autoclave - charmat method - where the sparkling wine ages for 4 months in contact with the yeasts.
AGING 3 months in bottle before sale.
