GRAPE VARIETY: Carricante
AREA OF ORIGIN ETNA, northern slope in the municipality of Castiglione di Sicilia.
HARVEST: The grapes are harvested by hand in the first half of October.
FERMENTATION: The grapes are harvested manually in small crates and quickly taken to the cellar and selected manually on a belt, to be softly pressed. The must obtained is clarified in the cold and left to ferment at a temperature of 15-16 ° C. Once fermentation is complete, the resulting wine rests on the fine lees for about three months. It then ages for 3 to 6 months in steel and cement tanks before bottling.
