GRAPE VARIETY: Grillo, Viogner, Chardonnay

AREA OF ORIGIN Valle del Belice. Soils soils composed mainly of limestone and clay, rich in iron.

FERMENTATION: Alcoholic fermentation for 15-20 days at a controlled temperature of 16-18 °C. Aging on the noble lees, in steel tanks with continuous batonnage for about three months.

PAIRINGS Fish couscous, raw seafood, Mediterranean chicken. Serving temperature 10-12 °C
