The particular vinification method used is the Passivento® Method, which involves the partial drying of the grapes starting directly in the vineyard and then completing in the fruit cellar, where the skilful control of ventilation helps the grapes to reach the ideal level of dehydration before pressing.
The result is a dark and intense red wine. Opulent on the nose with notes of caramelized figs and ripe fruit. With an important body, balanced both in roundness and persistence.
Perfect to combine with important courses, with strong flavors, such as game, stews and aged cheeses. Despite its remarkable structure, this wine lends itself to meditation and good company.

WINEMAKING Partial raisining of the fruit begins on the vine and is completed in special fruit drying cellars, where accurately regulated ventilation levels ensure that grapes achieve the perfect level of dehydration before pressing.
TASTING NOTES Red wine, dark and intense. Opulent nose of candied figs and ripe fruit, full bodied, balanced both in roundness and persistence.
FOOD PAIRINGS It particularly suits fatty and tasty dishes. It goes well with foie gras patè , salami and delicatessen meats. It perfectly matches the typical oven baked baby pork. Serve at 14-16°C
