TECHNICAL DATA SHEET
GRAPE VARIETY: Nero d’Avola
AREA OF ORIGIN The vineyards are located on dark alluvial and deep soils, of medium texture, clay-sandy silt composition, good content of organic matter.
HARVEST: Almost all the grapes are harvested by hand at the beginning of September to preserve their acidity, and only a part is harvested towards the end of September when they have undergone a slight drying on the plant, which increases their concentration.
FERMENTATION: Alcoholic fermentation for 15-20 days at a controlled temperature of 16-18 °C. Aging on the noble lees, in steel tanks with continuous batonnage for about three months.
PAIRINGS Ideal for picnic menus: fresh cheese sandwiches, chicken salad, mixed grill of fish but also white meats. Serving temperature 12-14°C.
