Produced exclusively in the Nebrodi area, this stretched curd cheese is made from cow's milk, with the classic pear or "col tuppo" shape and with a smooth and thin, compact rind, tending to yellow as it ages. The flavor is sweet and delicate for the fresh forms, and becomes spicier and tastier as the seasoning progresses.
There is a strong link between the Provola dei Nebrodi and its territory of origin. The Nebrodi mountains, which occupy the central position of the northern mountain range of Sicily, have a microclimate and a bio diversity of the territory that not only satisfies the nutritional needs of the animals, but makes their milk unique and rich in extraordinary nutrients.
The cheese, obtained with eco-sustainable systems and respecting the environment, is produced using traditional cheese-making and maturing processes handed down for generations: from the use of raw milk with its native microflora, to the use of traditional wooden equipment, essential for the acidification processes of the curd and for its enzymatic equipment. The experience and know-how of the dairyman is certainly one of the determining factors for the quality of the final product.
The paste is soft for the Fresh type, from semi hard to hard with the aging, ivory-white in color that becomes yellow-amber as the ripening progresses.
Provola Sfoglia dei Nebrodi DOp is the most seasoned version of this extraordinary cheese. Once formed, the heavier-weight provola, which can even exceed 10 kg in weight, are left to mature for long periods, the duration of which depends on the weight of the provola.
And it is at advanced maturation that it finally presents the classic flaking, highlighting a lamellar structure that determines its name and makes it acquire a flavor that is gradually more and more spicy and intense.
