The cellar activities are aimed at limiting interventions to safeguard the integrity of the wine and its correspondence with the territory. We love to experiment in an attempt to improve and offer the best possible expression so that the wines are the ambassadors of the territory and that they tell the story of those who produced them.
Each year animated by passion and love for the vineyards, he takes care of each vine individually, carrying out, among other things, the most important and delicate operations manually. Firmly believing that to make an excellent wine it is essential to invest in the care of the vineyards. Because only a healthy vineyard, in perfect balance, can give significant results.

The Cerasuolo di Vittoria DOCG Classico from the Paolo Calì winery is intense and enveloping
Manene is the first wine of the Calì winery, a Cerasuolo di Vittoria DOCG that combines the aromatic shoulder of Frappato with the robust one of Nero d'Avola. A red wine with a complex and long taste that recalls the well-defined personality of the Vittoria vineyards in the Ragusa area.
Intense and elegant red wine to combine with both red and roasted white meats, but also with tuna or important fish cooked in the oven.

Pruvenza 2017 is a wine with enormous potential. Frappato, a native grape variety that has always been produced in the Vittoria area, has the project of clearing the chiché which imagines it to be a wine to be drunk within the year.
On the nose, hints of red fruits and excellent drinkability, but also greater complexity and thickness than is usually found in the type.
To be paired with red meat dishes, cured meats and medium and long-aged cheeses. Try it on a tuna steak.
