Mood 2021 Sicilian rosé sparkling wine Frappato Terre siciliane IGT - Cantina Polo Cali '

The Ancestral Method is a winemaking method that compared to the Charmat Method and the Classic Method we could define it as the founding father of bubbles, since it is a process dating back to ancient times that maintains a lost naturalness with new methods.

The harvest of the grapes is anticipated with direct and immediate pressing of the bunches; then there is cold static decantation and partial fermentation at a controlled temperature. Fermentation is stopped at a precise sugar content, necessary to guarantee its recovery after bottling and, without the further addition of sugars and yeasts, the end of the alcoholic fermentation in the bottle is awaited, therefore without the process of disgorgement.

With a pale pink color, the acidulous notes of strawberry, raspberry, pomegranate stand out on the nose and mix with the explicit ones of bitter orange and mandarin essential oils, and with the fragrant ones of yeast.

On the palate it is fresh, savory with excellent minerality, together with a long persistence.

Excellent as an aperitif, perfect to accompany fried and raw fish-based dishes.
