GRAPE VARIETIES, AGE AND PRODUCTION AREA: Special selection of clones of Inzolia and Chardonnay cultivated in area Munti.
POSITION AND SOIL: North side lower reaches of a slight slope with deep, organic soil.
VINE TRAINING: Renewable branch pruning (Guyot) with protection from oxidation due to an
exuberant foliage. Early harvesting.
WINEMAKING: The grapes of Chardonnay and Inzolia were harvested and placed in small
crates about 14 kg, when they reach the proper acidic maturity. Then they were stored in thermo conditioned cells at 3-5° C for 24-48 hours. They were then pressed whole cluster and the different wine fractions were vinified separately. The Inzolia grapes were destemmed before pressing. After a quick cold clarification they were racked and fermented at controlled temperature with selected yeasts in stainless steel vats, and partly in oak barriques. In 2006 the wine bases was reassembled to create the cuvée, which was prepared for the second fermentation.
REFINING: After stabilization and clarification, the cuvée was bottled and added of the "liqueur de tirage" to enable second fermentation, where they remained for 90 months to mature on the lees. When the product has been deemed ready the bottles were positioned in pupitres for the operation of "rémuage" (riddling) at this phase was initiated the study for the creation of the "liqueur d'expedition", which was then added by the operations of "dégorgement". After packing the product has been placed in the temperature controlled storages for the fining.
COLOUR: A strawy yellow.
PERLAGE: Fine and persistent.
PERFUMES: Clear aromas of exotic fruits which blend in bread crust with a light note of hazelnut on the final.
TASTE: On the palate is soft and creamy. Its good acidity allows it to retain a good finesse.
ALCOHOL CONTENT: 12.5% by volume
FOOD MATCHING SUGGESTIONS: Excellent as an aperitif, ideal with appetizers, raw fish, oysters, soups and recipies with fish, enjoyable also with white meats.
SERVING TEMPERATURE: 5-7° C .

THE SELECTION OF VINES AND GRAPES TO MAKE UP THE RISERVA V38AG CUVÉE
The Inzolia bases come from vineyards of over twenty years old, cultivated in the Contrada Milici areas where the soil has a strong calcareous component. The grapes of the various areas are harvested at the beginning of September and vinified separately. The wines obtained ages in steel vats. The Chardonnay bases, also come from the deep calcareous soil of Contrada Milici, cultivated with pergola training system of over thirty years old. The grapes are harvested in early August and vinified separately. The wines obtained are fermented partly in French oak barriques of second passage and partly in steel vats.
A bright sparkling wine, with a light straw-yellow color with greenish hints. The perlage is fine and persistent that gathers in a crown of noble mold. To the nose opens straightforward, fresh, with aromatic vegetal notes that evolves in a greater complexity revealing scents of tropical fruit of initial maturation. The classic bread crust completes the olfactory profile. On the palate is creamy, soft, but fresh and persistent, confirming its firm and authentic character.
