GRAPE VARIETIES, AGE AND PRODUCTION AREA: Specially selected grape varieties commonly known in the Campobello di Licata area as Inzolia Rosa (70%) supported by the contribution of some aromatic selections of Chardonnay biotypes (30%) cultivated area in the Milici area. Vines about 15 years ago on average.

POSITION AND SOIL:Plateau, marl in origin with high clay component strongly calcareous.


VINE TRAINING: Renewable branch pruning (Guyot ) with selection of the growing shoots and protection from oxidation due to lush foliage. Early harvesting to support a balanced acidic complex.


WINEMAKING:The Chardonnay and Inzolia Rosa grapes were harvested and placed in small crates of about 14 kg, when they reach the full acidic maturity. They were then placed in temperature-conditioned storage areas at 3-5° C for 24-48 hours. The bunches were next pressed whole and the different wine fractions were vinified separately. The Inzolia Rosa grapes were crushed and destemmed before pressing. After a quick cold clarification they were racked and fermented with selected yeasts at a controlled temperature in stainless steel vats. At the end of the winter the wine bases were submitted to a series of blending tests to identify the most suitable cuvée, which was prepared for the second fermentation.


REFINING: After stabilization and clarification, the cuvée was bottled and the " liqueur de tirage" added to the bottle to enable second fermentation and it then remained for 18 months to mature on the lees. When the product was deemed ready, the bottles were positioned in pupitres for the operation of "rémuage" (riddling). This was when preparation was made to create the "liqueur d'expedition", which was added by "dégorgement". After packing the product has been placed in temperature controlled storage areas for the fining.

COLOUR: Pink with salmon glints.


PERLAGE: Very fine and persistent.


PERFUMES: Exotic red fruits with notes of lychee and strawberry.


TASTE:Creamy and sweet, it highlights the aromatic notes of fruit and pastry, enhancing a transverse complexity.


ALCOHOL CONTENT: 12.5% by volume


FOOD MATCHING SUGGESTIONS: Excellent as an aperitif , ideal with fruit salads, risotto with strawberries, lemon or melon.


SERVING TEMPERATURE: 5-7° C.
