This Gaudensius Rosè is a true author's Classic Method, which stands out for its uniqueness and which brings with it a selected collection of Nerello Mascalese grapes with great character
It is a very refined, pleasant Classic Method Spumante, with notes of red fruits and raspberries that give very fresh sensations on the palate.
Its harvest takes place through the soft and gradual pressing of its bunches, then the Vinification instead takes place with a short maceration in contact with the skins.
The Gaudensius Rosè is then aged in contact with the lees for at least 30 months
At sight it has a pale pink color, while the nose is very lively, with fragrances of red fruits, flowers and some pastry notes.
On the palate it is very full, soft, creamy and with a long persistence.

All the agricultural estates of Firriato have a particularity, for exposure, microclimate, soil composition and ventilation. From east to west, we pass from mountain viticulture on the Etna volcano, to that of the sea of the Egadi islands on the island of Favignana, passing through the exclusive contexts of the Trapani countryside. The recognition of the qualities of a soil and the in-depth knowledge of the vineyard-territory interaction are the keystone of the work that Firriato has carried out in all his estates. In particular, in Cavanera Etnea, where it produces Gaudensius Blanc de Blancs, a classic method sparkling wine born from the vinification of Carricante and Chardonnay, white berried grapes. The Carricante grapes, endemic and typical of Etna, come from the Cavanera Etnea estate, while the Chardonnay is the expression of the hills of a cru of the Borgo Guarini vineyard, in the Trapani countryside, where its grapes lend themselves well to a process of sparkling wine like the same bred in the Champagne area. Gaudensius Blanc de blancs, therefore, represents the perfect synthesis between two different terroirs but belonging to the same island.
