WINE NAME: Milazzo Classic Method VSQ
QUALIFICATION: Classic Method Sparkling Wine V.S.Q.
GRAPES USED: Inzolia dominant and Chardonnay.
TYPE OF SOIL: Milici, a plateau of marly origin with a high clayey component strongly calcareous rich in skeleton - Munti, lower slope with a slight slope, very organic and rather deep soil.
TRAINING SYSTEM: Awning and Guyot
HARVEST PERIOD: First half of August Chardonnay - first half of September Inzolia
COLLECTION METHOD: manual in boxes of 14 kg
VINIFICATION: whole cluster pressing, fermentation at controlled temperature and refinement of the sparkling wine bases in steel
MATURATION: the cuvée, with the addition of the "liqueur de tirage", is started for the second fermentation. the bottles were placed in stacks where they remained on the lees for at least 24 months
ALCOHOL CONTENT: 12.5% vol
CULTIVATION ENVIRONMENT: A unique terroir the Terre della Baronia with its 9 areas and related sub areas. The portions of the vineyard of the Munti area where the clonal selections of Inzolia have been planted combine with those of the Milici area where we find some Chardonnay vineyards that benefit from a soil with a medium texture profile and a good share of limestone skeleton that allow to obtain greater verticality and a strong acidic back, essential for creating a high quality Classic Method. Not only thanks to the specific characteristics of the climate of Campobello we are able to obtain a full maturation of the selected selections, capable of preserving freshness, elegance and aromatic vein. A "Mediterranean" expression that manifests itself in a style of winemaking and cellar choices all aimed at preserving and enhancing the territorial expression.
WORK IN THE CELLAR: All our classic method sparkling wines are created following a scrupulous and restrictive cellar regulations that we have built in 40 years of work and over 25 years of production and marketing. Minimum 24 months on the lees. At each harvest the sparkling wine bases are selected from the wines produced in the sub areas destined for the production of grapes for the classic method. Extreme control of the refermentation phases and of the aging times on the yeasts. Manual remuage, careful study of the dosage liqueur at each disgorgement and resting times and final refinement, at least 6 months after dégorgement.
SENSORY NOTES: A beautiful pale yellow color with greenish reflections and a very fine and persistent perlage. The notes of aromatic herbs emerge, among which liquorice and wild fennel stand out. The floral and candied citrus scents enrich it. On the palate it is very balanced with synergy between acidity, structure and persistence that give it a good complexity.
FOOD PAIRING: Excellent aperitif, ideal with appetizers, light soups and fish-based dishes.
RECOMMENDED SERVING TEMPERATURE: 8-10 ° C.
