Obtained from vines placed at about 500 meters above sea level on a sandy-loam soil with a good presence of skeleton. The 16 Filari is obtained from a harvest carried out in the early hours of the sun. Following de-stemming, the must obtained ferments in small steel tanks, thanks to indigenous yeasts. At the end of this phase, the malolactic fermentation is also carried out. The refinement consists of a period of 8 months in French oak tonneau and then a rest of 6 months in the bottle before being marketed.
Round and soft wine, to be drunk throughout the meal, with meat appetizers, cured meats, sauces or risottos, roasted or grilled meats.
Produced in the province of Palermo, in the Mazara Valley, in Camporeale, a small Sicilian town with a local economy linked to agriculture. Here the Vaccaro family manages the Case Alte farm, in the Macellarotto district, managing the vineyards under organic conditions. For three generations, the Vaccaro family, through careful and scrupulous control of the phases that characterize the production of wine, from the vineyard to bottling, has been producing excellent wines with excellent organoleptic characteristics, which are able to express the characteristics and richness of the Sicilian land.
The name "Case Alte" derives from the fact that the small winery, built in 2010, is located on top of a promontory about 500 meters high, with a sandy loam soil and an island climate.
The current winemaking project involves the development of the entire production chain in the small universe of the Macellaroto district, and aims to maintain a small size, on a human scale, which ensures careful and meticulous control of all stages of the production process, from the vineyard to bottling. The history of Case Alte and the Vaccaro family is a bit of a mirror of today's Sicily; one in which the new generations get involved and face with determination the challenge of producing excellence and communicating their passion, their territory and their culture to the whole world. A love that looks to the future, with particular attention to the issues of sustainability and organic farming, but which does not forget its history and the care that past generations have dedicated to each single bunch of grapes.
