The most beautiful grapes are harvested by hand and arranged in single layers in small boxes of maximum 5 gk 1 one. The grapes are placed for 4 weeks in ventilated fruit rooms at a constant temperature. The natural enzymatic processes of the grapes thus allow the development of aromatic and gustatory peculiarities. The grapes must be treated with gloves so as not to compromise their delicate balance. The wine ages for 8-10 months in small medium toasted wooden barrels. About four months after bottling it begins to express its characteristics to the fullest.
The wine obtained from partial drying of the grapes is opulent, powerful, but finely balanced. The candied notes envelop the toasted ones giving the palate fullness and sensuality.
It goes well with savory meat-based dishes, baked pasta and aged cheeses. Serve between 14-16 ° C. Serve 1 hour after opening
