Born from the collaboration between two icons of Italian excellence, Dolce&Gabbana and Donnafugata, Bollicina Gold Brut Rosé is a Sicilia DOC Metodo Classico sparkling wine that combines creativity, elegance, and artisanal mastery.
Produced from Nerello Mascalese grapes grown in Randazzo, on the northern slope of Mount Etna, this wine originates from sandy volcanic soils and a distinctive microclimate. The significant day–night temperature variation enhances the wine’s aromatic complexity and freshness.
Following manual harvesting and meticulous grape selection, the must undergoes soft pressing and fermentation in stainless steel at controlled temperature. It is then refermented in the bottle following the Metodo Classico process. The wine matures on its lees for 36 months and is aged for an additional 12 months in bottle, resulting in extraordinary finesse and persistence.
Perfect with crustaceans, fish tartare, seafood carpaccio, and prosciutto crudo, but also ideal as an all-meal sparkling wine. Serve at 6–8 °C in medium-sized glasses, without flaring, to appreciate its full complexity.
