Produced in the Contessa Entellina estate, this fresh Donnafugata white wine pairs well with refined appetizers, raw fish and shellfish, vegetarian dishes and white meats.
PRODUCTION AREA: South-western Sicily, Contessa Entellina estate and neighboring territories.
DENOMINATION: Sicilia Doc Grillo.
GRAPES: Grillo.
SOILS AND CLIMATE: altitude from 400 to 500 m above sea level; hilly orography with loamy loamy soils, with sub-alkaline reaction (pH 7.5-7.9). Total limestone from 25 to 30%. Rich in nutrients (potassium, magnesium, calcium, iron, manganese, zinc). Mild winters; dry and windy summers with strong temperature variations between day and night.
VINEYARD: espalier training, with Guyot pruning, leaving 6 to 10 buds for each plant; plant density: from 4,600 to 5,200 plants per hectare with yields of 65-75 quintals per hectare.
VINTAGE: Contessa Entellina recorded 615 mm of rain in the 2021 vintage, just under the 645 mm average * of this area: rainfall was concentrated in winter, particularly in February and March, while spring was been dry; in this season the delicate phases of flowering and fruit set took place regularly. At the end of June there was a slowdown in the vegetative phase of the plants, which was then compensated by the lower temperatures in July. A heat wave in the first two weeks of August accelerated ripening. The entire vegetative-production cycle was accompanied by intense and careful work in the vineyard and thus ended regularly. The quantity of grapes produced is slightly higher than in 2020 which - it must be remembered - was below the average. The quality is fully in line with the company objectives, oriented towards quality productions. * The rainfall data are collected by SIAS, Sicilian Agrometeorological Service; we consider the rainfall recorded from 1 October to 30 September of the following year; the average is calculated starting from the 2003 harvest.
HARVEST: the Grillo intended for the production of Passiperduti was harvested between the third ten days of August and the first ten days of September; the harvest is manual with careful selection in the vineyard.
VINIFICATION: further selection of the grapes in the cellar, on a vibrating table; after soft pressing, fermentation of the must follows in steel at a temperature of 14-16 ° C; the wine ages in tanks for three months and at least three months in the bottle before being marketed.
ANALYTICAL DATA: alcohol 13.38% vol - total acidity 5.5 g / l - pH 3.20.
TASTING NOTES (21/3/2022): Passiperduti 2021 has a bright straw yellow color with greenish reflections. The nose is broad and deep with floral notes of lavender and broom; the bouquet is enriched with citrus scents - lime and candied cedar - and finally recalls the flint. On the palate it has good structure and is sapid, mineral and persistent; it is a wine of marked complexity and elegance.
LONGEVITY: to be enjoyed within 4-5 years.
FOOD & WINE: Passiperduti goes perfectly with refined appetizers, raw fish and shellfish, vegetarian dishes and white meats. To be served in glasses of medium width and medium height; it can be uncorked at the moment, excellent at 10-12 ° C.
