Nero d'Avola Guardiani di Ceppineri DOC Red Wine 2017 Riserva
A soft and fragrant wine, with marked aromatic scents and strong notes of blackcurrant, black cherry and violet. The mouth is very balanced and elegant, with a surprising note of acidity.
Classification: Doc Sicilia.
Altitude: 150 m asl.
Climate: Temperate-warm, Mediterranean.
Terrain: Medium dough basically clayey.
Grapes yield/ha: 60 q.li.
Training System: Counter-espalier, guyot pruning.
Age of Vineyards: 40 years.
Plant Density: 4,400 plants/ha.
Harvest: Third and fourth week of August (3 pickings).
Grape Variety: 100% nero d'Avola.
Vinification: the harvest is done manually in small boxes. After de-stemming, the grapes are selected on a sorting table and sent to a traditional red wine-making. The grapes are left to macerate at a controlled temperature for 15-20 days, carrying out continuous pumping over to extract the varietal essences. Malolactic fermentation is carried out at the end of the very light drawing off and pressing..
Ageing/Refining: The wine ages in French oak / cherry barrels for about 24 months of different caliber. The bottling takes place without filtration and the wine is refined for a further 3 months before marketing
Organoleptic Characteristics:
ohol Content: 14% vol.
Total Acidity: 5,9g/l.
Serving Temperature: 16-18°C.
Food Pairing: Excellent as an aperitif, it also pairs well with fish crudité, grilled and salt baked fish and vegetables.
