CRUSHED AND SEASONED GREEN OLIVES
Seasoned green olives, also known as "Alivi scacciati" or "Alivi Cunzati", are part of the traditional preserves that can be found in all Sicilian kitchens.
The olives, Nocellara Etnea variety coming from olive groves on the slopes of Etna, are harvested by hand in the period from mid-September to late October. Processed and crushed on the day of harvesting, the salting and fermentation phase begins immediately. After a period of "maturation in brine", they are selected, desalted and seasoned according to different traditional recipes, in various treats to whet and capture the most demanding palates.
In this parsley version they are seasoned with salt, sunflower oil, parsley, fennel seeds, garlic, black pepper.
The seasoned crushed green olives are exceptional to serve as an appetizer or to accompany delicious aperitifs, try them with meats and cheeses and with our chillies.
Also interesting as a complement for main courses, Gocce di Sicilia recommends you to use them also to flavor your salads or to enrich your sandwiches.
Store away from heat sources, if the bag is still vacuum-packed it does not need to be placed in the fridge and can be kept for at least 12 months. Once opened, they can be stored in the fridge for up to 7 days.
