Gluten-Free and Lactose-Free Chocolate Panettone 500 g - Sal De Riso

People who need to avoid gluten and lactose usually give up panettone at Christmas, or settle for less. Sal De Riso, a pastry shop on the Amalfi Coast, has developed a dedicated recipe: a soft gluten-free and lactose-free dough made with lactose-free butter, fresh pasteurised eggs and Bourbon and Tahiti vanilla pods.

Inside there are 60% dark chocolate chips and an orange paste filling, which adds a citrus note without the classic candied fruit. There are no raisins.

The 500 gram size serves 4-6 people. The panettone contains no preservatives, so it should be eaten as soon as possible and kept in a cool, dry place below 20 °C.

Ingredients: sugar, maize starch, rice flour, lactose-free butter, fresh pasteurised egg and egg yolk, 60% dark chocolate drops (cocoa beans, sugar, cocoa butter, emulsifier: soy lecithin, natural vanilla extract), gluten-free wheat starch, rice starch, dehydrated potato flakes, humectant: sorbitol; fructose, psyllium seed fibre, pea protein, Bourbon and Tahiti type vanilla beans, brewer's yeast, thickeners: xanthan gum, hydroxypropyl methylcellulose; powdered glucose syrup (maize), emulsifiers: E471, sunflower lecithin; salt, vanillin.
