INGREDIENTS:
- 500 grams of fresh sheep ricotta
- 150 grams of sugar
- Gocce di Sicilia cannoli peels
- Decorations as desired (Chocolate drops, Pistachio grains, Candied fruit)
PROCEDURE:
First put the ricotta to drain in order to eliminate its serum.
Then put it in a bowl, add the sugar and work well with a whisk to mix them well. Your filling is ready! All that remains is to stuff our cannoli.
According to the Sicilian tradition, a simple spoon is used to fill the cannoli to ensure that the ricotta does not heat up inside the sac a poche with the heat of the hands during the filling and sour before its time.
Decorate the ends with candied orange peel or alternatively with chocolate chips or pistachio grains.
Arrange the Sicilian cannoli on a tray. Let them rest in the fridge for at least a couple of hours before serving, so as to make them flavor.
