Milazzo Metodo Classico Sparkling Wine NATURE  - Az. Milazzo

GRAPES VARIETIES, AGE AND PRODUCTION AREA: Chardonnay clones typically used to make sparkling wines and grown in the Milici area. Grapevines are on average about 25 years old.

POSITION AND SOIL: Plateau, marl in origin with a major clay content strongly calcareous.

VINE TRAINING: Pruning on spurred cordon (Guyot) with protection from oxidation by the lush foliage. Early harvesting to maintain a well kept acidic base.

WINEMAKING: The Chardonnay grapes were harvested in small 14 kg crates, when full acidic ripeness was reached, then they were placed in temperature-controlled units at 3-5°C for 24-48 hours. Next the bunches were pressed whole, giving different fractions of must, which were separately vinified. After a quick cold clarification, these were racked and fermented at a controlled temperature with selected yeasts in stainless steel vats and partly in oak barriques. At the end of winter and after many blendings, the masses were re-assembled to form the best cuvee, which is then made ready for secondary fermentation.

REFINING: After stabilization and filtration, this cuvee had the “liqueur de tirage” added and was sent for secondary fermentation. The bottles were placed in racks in a temperature controlled environment, where they remained for minimum 48 months to mature on the lees. When the product was considered ready the bottles were placed in pupitres for “rémuage” and preparation was made to create the “liqueur d’expedition”, added later by “dégorgement”. After packaging the product was kept in temperature controlled storage for its final refining.

COLOUR: Lucent yellow with greenish glints.

PERLAGE: Extremely fine and persistent

PERFUME: Notes of aromatic herbs to the foreground reminiscing of the coastal marine vegetation. Hints of white flowers. It ends with an excellent minerality with flintstones notes. Strong in the impact to the nose, at the same time lean and agile.

TASTE: Fresh, balanced and structured, persistent and sapid till the end.

ALCOHOL CONTENT: 12.5% by volume

FOOD PAIRING: A great wine most suitably taken with meals and especially with fish, mollusc and shellfish dishes.

SERVING TEMPERATURE: 7 - 9°C

AGING POTENTIAL: Its noble characteristics allow it to be kept for over 3 years from degorgement if in a suitable location and at a temperature not exceeding 12-15°C.

DESCRIPTION:

TERROIR AND CLIMATE: Milazzo NATURE is a blanc de blanc from Chardonnay Milazzo’ grapes where to find the perfect synthesis inbetween the best expression of the Chardonnay grapes and the combination inbetween the terroir and the Mediterranean climate.  Infact thanks to the mild climate typical of Campobello di Licata we obtain a full maturation of the chosen selections, able to preserve freshness, elegance, aromatics. A Mediterranean expression presenting itself with a precise style in the choices made in the vineyard and in the cellar aiming at preserving an authentinc territorial expression.

WINEMAKING: A vinification management aimed at emphasizing the research on the cultivar and favorable interaction inbetween position, soil’s characteristics and microclimate of the vineyard. A rigorous protocol of production with bases matured partly in stainless still vats, partly in barriques before the tirage made in the 2012.  Minimum maturation 48 months.

SENSORY PROFILE: Cristal clear, pale yellow with greenish hints, fine beautiful perlage, persistent and very well made. Clean to the nose, aromatic vegetable perfumes emerge evoking the typical vegetation of the Mediterranean shores. Notes of white flowers, it closes with an excellent minerality reminding of flint. Notes of yeast and bakery are not present, in perfect line with the Nature’s style. The nose though rich is not reminding of creamy opulence but has a muscular character at the same time lean and agile. The mouth confirms the first impression: fresh, balanced, structured, persistent and sapid till the end.
