GRAPE VARIETIES, AGE AND PRODUCTION AREA: Chardonnay dominant supported by the aromatic contribution of some Inzolia biotypes selected and cultivated in the Milici area. Yield of 34 hectolitres per hectare.
VINE TRAINING: Spur cordon pruning of shoots and control of the quantity of fruit pro-duced by thinning of the bunches in veraison in order to achieve a proper ripening of the grapes and the optimal balance between sugars and acids. This is necessary to obtain the wine’s final structure and complexity.
WINEMAKING: The grapes were harvested and placed in small perforated boxes about 14 kg, then remained in cold storage units at 5° C for 24-48 hours. Then they were delicately destemmed, and gentle pressed in pneumatic presses. After a light cold clarification, the resulting musts were racked and fermented at a controlled temperature with selected yeasts, partly in stainless steel tanks and partly in oak barriques.
REFINING: During the maturation process lasting about 1 year, the wine was con-stantly subjected to "bâtonnage”, stirring the settled lees back into the wine. Later, after assembling the wine from the vats with the wine from the oak barriques and a light filtering, it was bottled in February 2013. The final phase of maturation in the bottle will help the development of tertiary aromas.
COLOUR: Intense straw yellow with golden glints.
PERFUMES: Tropical fruits and yellow flowers rich and concentrated, well mixed, with vanilla and hazelnut notes. A further refining in the bottle will enrich the bouquet with hydrocarbons, sage and boisé notes.
TASTE: Great balance between alcohol and acidity, resulting in an extreme soft-ness on the palate, accompanied by a remarkable aromatic persistence and a minerality assuring a unique complexity.
ALCOHOL CONTENT: 13.5% by volume.
FOOD PAIRING: Shellfish, tartare of tuna and fassona (Piedmont beef), salt-cod confit, ri-sotto with taleggio cheese , truffles, air-cured ham with a long drying period. It is the perfect accompaniment for light meats and vegetable-based recipies..
