In the vinification process, maceration takes place in 12-15 days at 26 ° C with daily pumping over. Once drawn off, it is aged in first and second passage French barriques for about 8 months

AREA OF ORIGIN Valle del Belice. Relatively deep alluvial based soils of medium texture with a mix of limestone and sand. Dark soils with a good content of organic matter.
SOIL Argilloso Limoso
WINEMAKING This Merlot is a selection of the best barrels during maturation. The must is fermented for 12-15 days with extended skin maceration and a delestage towards the end of fermentation. The wine is matured in a mix of one and two year old French barriques.
TASTING NOTES Intense deep red colour, almost black, with purple hues. The nose is complex with the integration of French oak balanced by plum, blackberry and spice. The palate is full and concentrated with dark berry fruit, subtle tannins and vanillan oak edges.
FOOD PAIRINGS It particularly suits fatty and tasty dishes. It goes well with foie gras paté, salami and delicatessen meats. It perfectly matches the typical oven baked baby pork. Serve at 12-14°C
