Fizzy and scented wine from Zibibbo grapes typical of Pantelleria.
In each terrace bordered by dry-stone walls and cultivated with zibibbo, the man has always tried to make the most of the cultivable space. In this regard, close to the walls, associated with caper plants, a small pergola of white or red grapes was planted to make wine for itself. These pergolas were made up of varieties of native grapes from Sicily such as cataract, insolia, Grecanico, grillo, damaschino. The peasants were very jealous of this production which, associated with the second fruit of the Zibibbo, around the fourth decade of September (racemes), went to make a particular wine.
This wine remained with a little sparkling wine. From the observation of this tradition was born the idea of producing a wine from late Zibibbo grapes with slow fermentation, whose light fizziness exalted the aromatic freshness typical of the vine.
This wine has a gradation of 12 °, a good acidity and a delicate scent of fresh white fruit. The slight perlage and the delicate taste make it a pleasant and persistent wine, to be combined with the whole meal, as an aperitif, and in all moments of panache.
