Eolia Bianco, a small production wine, produced in Salina, in the center of the wonderful archipelago of the Aeolian Islands.
This Malvasia is a white with great character that smells a lot of iodine, saltiness and rock herbs, the flavor is very intense and dashed with salt.
It is produced by Luca Caruso and Natascia Santandrea, two entrepreneurs, owners of the Hotel Signum in Salina, a wonderful hotel which also houses a starred restaurant.

It comes from a vineyard located between Monte Fossa and Monte Perri, ancient extinct volcanoes on the island of Salina.
After harvesting, the grapes are softly pressed and then fermented in small steel vats at a controlled temperature for about 12 days.
After which they mature on the lees for 12 months, and the wine is then aged in the bottle for about 9 months.
This is a fairly small production, just consider that "only" 2300 bottles were produced in the 2020 harvest.
It is a white with a very intense flavor reminiscent of salt, with great character and a scent that tastes of iodine, saltiness and rock herbs.
