The type of chickpeas with large seeds, the full and round shape are typical of the Nebrodi.
They are characterized by a medium shape, a good texture and a vegetable flavour

Sicilian chickpeas are highly proteinic and rich in mineral salts such as magnesium, calcium, phosphorus, potassium and vitamins A-B-C
They also regulate cholesterol, increasing HDL ("good" cholesterol) and reducing LDL ("bad" cholesterol)
They are also rich in fiber and therefore help both the intestine and the heart tissues.
They are perfect for diets that are very rich and full of vitamins.
They are a very functional product in the kitchen, they adapt to many recipes, such as soups, or hot soups, or the famous Palermo "panelle", or the "calia".
An excellent recipe to create with these chickpeas are tuna fillets on a bed of chickpea hummus, excellent as a second course, very rich in vitamins and low in fat.
METHOD OF PREPARATION:
Soak the chickpeas in cold water for 6/8 hours. Replace the water and put them on the fire, preferably in an earthenware pot.
Bring to the boil and continue cooking over low heat for about 2 hours.
Salt towards the end of cooking.
Store in a cool, dry place away from heat sources.
