Sunny, a unique wine that defied every oenological rule
Soleggiato is a more unique than rare perpetual wine. It is produced through exposure to the sun of Moscato Bianco grapes that grow in the wonderful Marabino vineyards in Val Di Noto.
Its production defies every oenological rule, in fact, after the fermentation of the sun-dried grapes, this wine is transferred to steel tanks containing perpetual wines from other harvests. After this processing it is exposed to the sun in Demigiane for about a year, and finally it is bottled.
A very long process from which this perpetual Sicilian wine is born which stands out from the others because it is not the usual sweet wine at the end of a meal, but indeed, thanks to its freshness, it is an aperitif or meal wine, where the Moscato, which gains complexity thanks to the oxidative process.

SOLEGGITO, A PERPETUAL WINE THAT INVITES YOU TO DRINK THANKS TO ITS GREAT PARTICULARITY
Soleggiato is a very particular perpetual wine, known for its complex processing.
It comes from the vineyards where the famous Muscatedda and Fondo alla Palma are born, from Moscato Bianco grapes which are left to dry in the sun for 12 months.
Then, after having fermented with its skins, it joins a "mass of wines", including the Fondo alla Palma, the Passito, which is found in a large "perpetual" steel tank, and remains there to refine for several months.
Finally, it is placed in large demijohns and exposed to the sun for 12 months. 12 months in which light, heat and oxygen give this perpetual wine great oxidative nuances.
From a food and wine point of view, this Solegggiato is a very flexible wine, it is salty, fresh, very suitable for large aperitifs with seafood, fish, smoked meats, or spicy dishes. It is a perpetually dry wine, but with a low alcohol content, 12.5%, which invites drinking while maintaining the typical notes of muscat.

VINIFICATION: Drying of the grapes on racks placed in the sun, vinification with spontaneous fermentation in steel tanks with the skins.
MATURATION: In barriques of various essences for 30 months, in steel tanks with perpetual wine from multiple harvests, complete in demijohns placed in the sun for a year.
