The traditional production method

This Recioto by Quintarelli is a sweet wine made using an ancient production technique called "appassimento". The selected grapes, mainly Corvina and Rondinella, are harvested by hand and placed in crates or spread out on racks to dry. During this process, the grapes lose water and concentrate their natural sugars. After about three months of drying, the grapes are pressed and the must obtained is fermented slowly, leaving a residual amount of sugar which gives the wine its characteristic sweetness.
