Winery of the Princes of Spadafora

The founder of the farm is Don Pietro dei Principi di Spadafora, who inherits the estate from his uncle Michele De Stefani, a talented farmer and breeder of racehorses. The estate suffered a lot of damage during the 1968 earthquake but Don Pietro is committed to both the reconstruction and the redevelopment of the company, re-evaluating the native vineyards and bringing allochthonous vineyards to Sicily for the birth of quality wines.

The current owner is Francesco Spadafora, son of Don Pietro, married to his wife Claudia, flanked by his daughter Enrica.

A company that bears the name of a noble Sicilian family whose first certified traces date back to 1230. In the municipality of the Municipality of Monreale, in the countryside of Virzì, on hills between 250 and 400 meters above sea level, they only use grapes grown and harvested by hand, putting in each bottle an immeasurable passion and the values ​​that have always accompanied the family.

The Spadafora Agricultural Company cultivates all its vineyards in an agricultural area all around its cellar, using only its own grapes which, having reached the right degree of ripeness, will be destined for the production of our bottles. This is one of the most important and delicate jobs they have been doing since 1993, that is the first harvest. They grow organically, using only natural products and making wine without the use of sulfur. Yeasts produced from the same grapes are strictly used, respecting either the times and the needs of nature so that you can find in the glass the grapes and those characteristics of the soil that make the Principi di Spadafora wine unique.

For the fermentation of wines, with the first grapes arriving in the cellar, pied de cuve are prepared. The same pied de cuve, once fermentation has been activated spontaneously, will be used to inoculate the musts that will gradually arrive in the cellar, thus allowing us to obtain wines that are not children of fermentation from selected yeasts, but children of yeasts produced with different grapes of our territory. .

The result of these fermentations, without added sulfur, ensures that fermentations take place spontaneously and develop the typical aromas of the reference grape. This premise is a must because for the company the harvest and winemaking represent the result of a year of work in the vineyard and the care put into the bottles in respect of the customer.
