GRATED TUNA BOTTARGA - 42 GRAMS
This tuna bottarga is processed and packaged in a Syracusan family business, following the artisanal method and choosing only the best tuna.
The tuna from which our bottarga is extracted have all been caught in compliance with the Dolphin Safe Protocol which regulates tuna fishing trips in such a way as to safeguard the health of the dolphins, preventing them from being caught accidentally.
Once extracted, the tuna eggs are washed, salted with sea salt and left to dry and dry with a process that requires continuous attention and care to obtain the ideal degree of drying. Once ready, the tuna bottarga is preserved either in slices or grated in glass jars.
Usage tips:
Tuna Bottarga is an excellent ingredient for taste and quality, but at the same time very simple to use and useful for preparing quick dishes.
Take for example spaghetti with bottarga, 10 minutes are enough to prepare a good dish with an unmistakable aroma!
Here is the recipe: heat some extra virgin olive oil in a pan with two cloves of garlic. Once the perfume has been released, remove the garlic and pour the drained pasta al dente and half of the jar of bottarga into the pan (if you like, add a few leaves of chopped parsley and a pinch of black pepper), stir in a little water cooking and serve, sprinkling the plates of spaghetti with the rest of the bottarga contained in the jar.
The contents of this jar are ideal for preparing 4 (abundant) or 6 (normal) portions of Spaghetti alla bottarga.

Tuna Bottarga can also be used to flavor fish soups or cold appetizers, for example with fresh ricotta or fresh artichokes.
Once the package is opened, it can be stored (preferably in the refrigerator) safely even for several months, obviously to enjoy it at its best we recommend not to go beyond two months from opening the jar.
