MOFETE ETNA WHITE DOC 2021 - PALMENTO COSTANZO

The "Mofete" is an Etna Bianco that the Costanzo family, owner of the Palmento Costanzo winery, creates starting from two native vineyards: Carricante and Cataratto.

After the harvest, done strictly by hand, the grapes are softly pressed, and then remain in steel containers for up to 6 months, at the end of which we proceed with bottling.

It is characterized by a straw yellow color, by a perfume with notes composed of citrus and minerals, typical smells of Etna, and the taste is very fresh, savory and agile.

Due to its characteristics it is a compromise between a dry and a fruity one, for this reason it is excellent to combine with an appetizer, even better if made up of raw seafood.

PRODUCTION AREA: C.da Santo Spirito, Passopisciaro, Etna.

SOIL: Volcanic sands, stones and exclusive rocks.

GRAPES: Carricante 70% - Cataratto 30%.

TRAINING SYSTEM: small tree supported by chestnut poles. Plants up to 30 years of age.

HARVEST: manual, end of September.

VINIFICATION: soft pressing and fermentation in steel with indigenous yeasts.

AGING: 4 months in steel in contact with the fine lees and 2 months in the bottle.

COLOR: straw yellow of medium intensity

BOUQUET: strong citrus and mineral notes

TASTE: agile. fresh and savory
