Maria Costanza Bianco since the nineties has represented an oenological model of integration between an indigenous Sicilian variety, Inzolia, and the international Chardonnay. This union has given life to a wine that has written a fundamental page of oenology in Sicily.

From this path was born the Maria Costanza Bianco Riserva which, today, retraces the path of the Inzolia-Chardonnay partnership, flanked by 10% of Viognier and 5% of Sauvignon Blanc, thus creating an extraordinary example of varietal complementarity.

"The path that led to the birth of this wine begins with the introduction, in our experimental fields, in parallel with Chardonnay, of these two vines which, right from the start, showed a different and unprecedented expression in their varietal characteristics, respect to the places of origin ".

The in-depth knowledge of the territory, and of the indigenous and non-native varieties, is what has led the company to develop a new concept of wine territoriality, where soil, climate and people characterize a product in such a profound way, as to make it an expression of territory and not only of the vine.

Beautiful color, bright straw yellow. The nose is frank, rich and complex: the notes of Mediterranean aromatic vegetable and yellow flowers, dandelion, chamomile and wild rocket are evident. Tropical citrus and honey notes blend with slightly hinted tertiary hints of hydrocarbons and well integrated with vanilla. In the mouth it is warm, full and structured. Opulent and rightly savory for an uncommon persistence for a white wine.

WORK IN THE CELLAR:

This wine is the result of an oenological work in which the use of the barrique was intended as a tool to convey the typical expression of Sauvignon and Chardonnay towards notes of Mediterranean aromatic herbs to thus enhance the climatic influence of the cultivation environment. , while the discrete notes of hydrocarbon and flint are the result of the combination of plant and soil. The long maceration has instead contributed to enrich the product with tropical citrus notes perfectly balanced by a floral background, which leads to the definition of a new concept of aromatic longevity of the Maria Costanza Bianco Riserva, elevating it to a wine of extraordinary complexity and durability.

SOIL TYPE: plateau of marly origin, with a high clayey component, strongly calcareous rich in skeleton

TRAINING SYSTEM: espalier with spurred cordon pruning; awning with guyot pruning

STUMPS PER HECTARE: from 2500 to over 5200

HARVEST PERIOD: Chardonnay, Viogner, Sauvignon Blanc second half of August. Inzolia early September

HARVEST METHOD: selection of the bunches on the plant and manual harvesting in boxes of 14 kg

VINIFICATION: a long maceration of the Viogner and Chardonnay grapes, followed by fermentation in steel together with Inzolia. Sauvignon Blanc and part of the Chardonnay complete the fermentation in barrique, where they refine for a further 12 months.

ALCOHOL: 13% vol

PAIRING: shellfish, tuna and fassona tartare, cod in confit, risotto with taleggio cream, truffle, long-aged raw ham. it also goes perfectly with light meats and vegetable-based dishes
