It comes from a vineyard located between Monte Fossa and Monte Perri, ancient extinct volcanoes in the interior of the island of Salina.
This Sicilian red wine is the result of the union of two native vines: Corinto Nero and Nerello Mascalese and Cappuccio. Both reflect the great authenticity of the volcanic terroir of Salina.
The grapes are harvested by hand, and then left to ferment in large steel tanks for about 10 days. After that, they mature in French oak barrels for a year, and finally refine in the bottle for another year.
It has a deep red color, and presents itself to the nose through a complex and enveloping bouquet, where notes of ripe red fruits, aromatic herbs, licorice and light toasted aromas emerge from the maturation in oak barrels.
The flavor is full-bodied, its tannins are well balanced and the finish is very persistent.
It pairs perfectly with meat, mature cheeses and mushrooms.

Fermentation: in steel for 10 days
Maturation: in large, 15-hectoliter, untoasted Gamba oak barrels for 12 months;
Aging: in bottle for another 12 months
