The Passivento method is the method that involves the partial drying of the grapes directly in the vineyard, which is then completed in the fruit room, where the skilful control of ventilation helps the grapes to reach the ideal level of dehydration before pressing.
The wine then ages for a period in steel and for another 12 months in wooden barriques.
This Sicilian Riserva red wine comes from a blend of Nero d'Avola and Cabernet Sauvignon grapes, resulting in a fruity and intense red wine, which excellently accompanies important dishes with strong flavours, such as game, stews and mature cheeses.

Passivento Riserva, an intense and full-bodied Sicilian red wine
The Passivento Riserva Sicilia DOC red wine is produced by Barone Montalto in the Santa Ninfa area. The result of the careful selection of the best grapes from the Nero d'Avola and Cabernet Sauvignon vines, it expresses the most typical aspects of the oenology of its land, with a broad and persistent character.
The particular winemaking method used is the passivento® method, which involves the partial drying of the grapes starting directly in the vineyard and subsequently completing in the fruit cellar, where the expert control of ventilation helps the grapes reach the ideal level of dehydration before pressing.
The result is a dark and intense red wine. On the nose it presents aromas of red fruit and spices, accompanied by vanilla and black pepper.
In the mouth it is structured, full-bodied with soft and dry tannins.
Perfect to pair with important courses, with strong flavours, such as game, stews and mature cheeses. Despite its notable structure, this wine lends itself to meditation and good company.
