Altitude: from 100-120 m asl

Soil: Medium mixture with predominance of clay

Yield: 60-80 quintals / Ha

Planting system: espalier, guyot pruning

Harvest: September

Grape variety: 100% Nero d'Avola

Vinification: Harvesting is done manually in the coolest hours of the day. After destemming, the grapes are left to macerate at a controlled temperature. Alcoholic fermentation then begins (18/25

days), which is followed by racking.

Aging: The wine is initially aged in steel, followed by a passage in oak and cherry wood of c.a. 6 months, and then completed in the bottle.
