The pitted green olives are one of the traditional preserves that must be had in all Sicilian kitchens.
The olives, Nocellara Etnea varieties from olive groves on the slopes of Etna, are harvested by hand in the period from mid-September to the end of October. Work on the day of harvest, immediately begins the stage of salting and fermentation. After a period of "maturation in brine", they are selected, desalted, pitted and seasoned according to the different traditional recipes, in various conce to tease and capture the most demanding palates.
In this delicate version are used only salt, vinegar, water for brine and seasoned with sunflower seed oil and parsley.
This green olives are exceptional to serve as an appetizer or to accompany delicious apetizer, try them with meats and cheeses and with our chillies.
Also interesting as ingredients for main courses, Gocce di Sicilia recommends using them in your fish dishes or to flavor sweet and sour meatballs!
Store away from heat sources, if the bag is still vacuum-packed it does not need to be placed in the fridge and can be kept for at least 12 months. Once opened, they can be stored in the fridge for up to 7 days.
