In order to protect the taste and quality, the anchovies, as soon as they are caught, are processed a few hours after being caught, in establishments close to the fishing sites.

They are a very versatile product, which lends itself to being able to accompany many recipes, such as pizzas, appetizers, first courses and various condiments.
